Its important to handle the pastry that makes up the casing for the tart (pate sucree) as little as possible. If you overwork the pastry it becomes tough and you loose the crumbly texture making it more “chewy” and it will shrink more.

The filling consist of eggs, sugar, lemon juice and cream.
