Once you've got your roast cooked to perfection and it needs to rest, remove the meat to a separate pan, but don't wash the pan! The burnt scrapings makes an excellent gravy in no time.

While the pan is still nice and hot, pour boiled water into the pan and scrape off all the flavourful stuff stuck on the bottom of the pan dissolving it into the water. If the water is hot and the pan is still hot, its really an easy job and the added bonus that you dont need to soak and scrub your pan!

Pour the pan juices into a separate saucepan and bring to a boil. Reduce the pan juices and season with salt until the flavour has concentrated enough.

Dissolve one table spoon of cornflour into half a cup cold water...

...and add to pan juices to thicken. Season to taste.
